Traders of the month: October

Borough Cheese Company

Visit trader page

Dominic Coyte of Borough Cheese Company sources a small but stellar selection of cheeses from some of the most respected producers and affineurs in Europe and the UK.

Dominic spoke to us about the use of raw milk, the impact of Borough Market on British food culture, and his lifelong pursuit of the perfect cheese.

The Cinnamon Tree Bakery

Visit trader page

Run by Andy Geddes and Anita Khawaja, The Cinnamon Tree Bakery bakes biscuits and crackers in small batches in Camberwell using traditional equipment and techniques.

Over the October half term holiday, the stall will be providing some ghoulish Halloween biscuits for children to decorate in the Market Explorers Garden.

Gourmet Goat

Visit trader page

Inspired by the Greek Cypriot approach to cooking, where simple, seasonal ingredients are cherished, Gourmet Goat sells wraps, pilafs and salads packed with British produce.

Unwanted by the dairy industry, billy kid goats are usually sent straight to slaughter. The prominent place of goat meat on Gourmet Goat’s menu seeks to provide a small corrective to this waste.

Hickson & Daughter

Visit trader page

Michael Hickson’s greengrocer’s stall offers a comprehensive range of high-quality fruit and veg sourced with a strong commitment to minimising the environmental impact.

Michael talked to us about fighting food waste, enjoying the shifting seasons, and how his arrival at Borough Market as a 17-year-old barrow boy turned his life around.

Hobbs Roast

Visit trader page

Hobbs Roast is a characterful hole-in-the-wall street food joint specialising in freshly made sandwiches stuffed with hot roasted meats, including pork, chicken and beef.

Michael and Julie Hobbs, who run the stand, have been part of the Borough Market community for several decades, with Michael starting his time here as a market porter.

The Olive Oil Co

Visit trader page

The Olive Oil Co imports olive oil and vinegar from specialist producers across Italy, including many from founder Danilo Manco’s home region of Puglia – a centre of Italian olive oil production.

As this year’s olive harvest gets underway, Danilo talked to us about the simple but highly demanding art of making high-quality extra virgin olive oil.

Silka

At Silka, Asian spices are combined with European ingredients to create both much-loved British Indian dishes and less familiar creations, with a focus on lighter eating.

With this year’s Diwali celebrations due to start on 18th October, Gurdeep Loyal heard from Borough Market’s South Asian diaspora about the food and rituals of the festival of lights.

Tapas Brindisa

Visit restaurant page

The vibrant, convivial Tapas Brindisa restaurant makes good use of exceptional ingredients sourced by Borough’s stalwart Spanish food and drink importer of the same name.

Brindisa’s head chef Flori Porja shared a typically appealing recipe for grilled hispi cabbage served with almogrot, a cheese and red pepper puree native to the Canary Islands.

Trethowan Brothers

Visit trader page

Todd and Maugan Trethowan make Pitchfork Cheddar and Gorwydd Caerphilly in their north Somerset dairy, using raw milk, hand-turned presses and heritage methods.

Gorwydd Caerphilly is a key ingredient in this autumnal recipe from Jenny Chandler: a traditional Kentish apple and cheese pie that was apparently a favourite of Charles Dicken.

The Turkish Deli

Visit trader page

The Turkish Deli sells traditional Turkish produce sourced directly by husband-and-wife team Graham and Cimen from Cimen’s home region of Gemlik, which is famed for its olives.

Turkey’s Republic Day is 29th October – a perfect time to enjoy some exceptional Turkish delight washed down with a cup of traditional Turkish coffee, a drink described to us by Graham.

Turnips

Visit trader page

Turnips is a fruit and veg wholesaler and retailer run by the Foster family, who source high-quality produce from a network of independent farms around Britain, Europe and beyond.

Throughout October the stand will be heaving with squashes of every shape, size and colour, perfect for Romy Gill’s dry curry of diced pumpkin and black chickpeas, cooked in Bengali five-spice.

Utobeer

Visit trader page

Utobeer is a completely independent, specialist beer shop with 700-odd beers and ciders on display at any one time, mostly from smaller scale and craft breweries.

Founded by Mike Hill and Richard Dinwoodie, the stand is part of the rich history of beer in this corner of Southwark – a story we explored in this romp through the centuries.
