Nothing at Borough Market stays the same for long. Because of the way our produce traders grow or source their food, their stalls are constantly being reshaped by the natural rhythms of harvesting, fishing, breeding and hunting. In the coming weeks, as autumn kicks in, the bright colours of summer will slowly be replaced with a more muted palette. We’ll be seeing squashes, apples, pears, nuts, beetroots, mushrooms, oysters, venison, game birds, hard cheeses – perfect ingredients for the deep, comforting dishes we crave as the nights draw in.
